Goh Knives

Goh Umanosuke Yoshihiro – Honyaki Knives

Honyaki means “true-forged”. Each knife is handmade according to the traditional methods used in ancient Japanese sword making. Forged of the highest quality Yasugi steel by master craftsmen of exceptional skill, some with over 50 years of experience. The steel is heated and folded in hearths that reach temperatures in the thousands then skillfully drawn out, quenched and polished, resulting in hard durable blades exhibiting beautiful mist patterns. Prized by professional chefs for their superior cutting edge and blade hardness. Each knife is a work of art.
