The most versatile and therefore the most popular of all the high quality kombu, Ma Konbu has a refined sweetness, and produces a well rounded, clear dashi.
Possessing thick wide semi-hard leaves it is suitable for cutting into shapes and is also suitable for a multitude of other classic preparations althought it will generally require slightly longer cooking to become soft enough to eat.
